jjbrunton 006761d3b0 feat(backend): add standalone data plane 
Replace the Supabase application data plane with the Node/PostgreSQL API, migrate mobile, admin, web, and MCP callers, add controlled cutover tooling, and define hardened Dokploy infrastructure.

jjbrunton 7545289dd3 fix(admin): use npm workspace in Docker 
Align admin production and development images with the repository's committed npm workspace and lockfile. This ensures shared and Expo-linked dependencies are installed before the admin build runs.
